Just add water and the included yeast packet, follow the simple steps, and you’ll be serving pizzas in as little as two hours — or proof for four hours for an even lighter, more open texture. Ingredients
Dough Mix: Organic Unbleached Wheat Flour, Durum Wheat Flour, Salt, Enriched Wheat Starch (Wheat Starch, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Yeast, Malted Wheat, Ascorbic Acid.
Yeast Packet: Yeast, Sorbitan Monostearate, Ascorbic Acid.
Allergen Info: Contains Wheat.
Step-by-Step Instructions
Step 1: In a large bowl, combine the dough mix and included yeast packet. Hand-mix for 30 seconds.
Step 2: Add 1 ¾ cups (430g) room-temperature water and mix for another 30 seconds.
Step 3: Knead until smooth — about 10–12 minutes by hand or 5–8 minutes on low speed in a mixer.
Step 4: Divide into 4 equal dough balls (270–275g each) and place in a lightly oiled GOZNEY° Dough Tray or container.
Step 5: Cover and proof at room temperature for 2–4 hours, until doubled in size.
Step 6: Coat each dough ball in flour and hand-stretch to a 12" circle.
Step 7: Add desired toppings.
Step 8: Bake in a GOZNEY° pizza oven at 625°F for 5–6 minutes, rotating as needed, until golden brown and crisp.
Tips & Tricks
- For better texture: Proof for the full 4 hours for a lighter, airier crust.
- Freezing: After balling, dough can be frozen for up to 3 months. Defrost at room temperature before stretching.
- Prevent sticking: Lightly flour your work surface and placement peel with flour or semolina.
- Hole in your dough? Simply pinch it closed before topping.
- Perfect stretch: Flatten from the center outward, keeping air in the crust. Use the backs of your hands and gravity for a gentle, even stretch.

Delivery of GOZNEY° Products
GOZNEY° ovens & their pizza-making accessories can be purchased in person at our Boise, ID showroom, or we also offer delivery to any location within the contiguous US (currently for free on orders of $499+ for a very limited time!). Larger ovens ship via palletized freight, and we always include a lift gate to get the oven off the truck. Freight deliveries also include pre-delivery notification by the carrier before the delivery day. Smaller items are shipped via UPS or USPS. GOZNEY° Oven Care & Maintenance
For cleaning the exterior of the oven, it is important to make sure that the oven has cooled down first. Then, use a non-caustic cleaning spray free of bleach to remove any dirt or stains. (Avoid abrasive cleaners such as Pink Stuff or Bar Keepers Friend.) Finish by wiping the area with warm soapy water and a soft sponge or non-abrasive dish cloth, followed by drying with paper towels.
An effective method for cleaning the interior of the oven is to incinerate any food residue or soot. Once the temperature of the oven reaches 650˚F, allow to stay at that temperature for 180 minutes to effectively remove any burnt-on food.
